Dinner!
Tonight, I decided to be adventurous! We had Cauliflower Lasagna... Remember cauliflower pizza? This is the same concept, except I used the cauliflower pizza crust for noodles.

Sunday Donuts
Bignets... pronounced "Bin-yays." And they're oh-so-yum.
These came hand delivered from Cafe Du Monde in New Orleans, but they're available at World Marketplace/Cost Plus. (not available online though)
After meeting today we went for a bike ride with Trevor and Michelle, later we had dinner at Spooky's & then we headed home to make Bignets. They're so easy to make - just add water, flatten the dough, cut into strips & deep fry in oil. Michelle has made them before so she was the expert, and I watched and learned as these will definitely be made again in this household! Since I was obviously concerned about our donuts being healthy, we deep fried them in Olive Oil instead of Canola. This definitely made them much better for us... in fact, probably even healthy, right?! :-)

Flowering Tea... etc.
I realize this post is LONG overdue, and I'm sorry about that! We haven't had much excitement in our lives to be posting about... :-)
Locally, our weather has turned beautiful. If anyone has been thinking about coming to visit it's the perfect time for that! (hint hint) Spring is definitely here! Our lawn is just gorgeous. It has come back even fuller than last year when we put it in, however the boxwoods are struggling... :-( I think the heavy snow this winter didn't do much for them, but hopefully our spring sun will help them cheer up!
Yesterday Peter and I went down to our local motorcycle shop & bought new helmets. Now normally this wouldn't be of interest to any of you except that now we have two extra helmets in case anyone wants to ride with us! ;-)
In other news, I bought a new teapot! I've been looking for one of these for awhile, ever since I saw one at my sister Sherrie's house. It's called flowering tea, and so fun to watch bloom!

Dinner - Again!
Tonight was a new experiment! I made Cauliflower Crusted Pizza... and it was GOOD!
My substitutions/additions:
Again - not the most photogenic meal, but tasty!

Cauliflower Pizza Crust
1 cup cooked, riced cauliflower**
1 egg
1 cup mozzarella cheese
1/2tsp fennel
1 tsp oregano
2 tsp parsley
pizza sauce
toppings
mozzarella cheese
Preheat oven to 450 degrees.
Spray a cookie sheet with non-stick spray.
In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.
Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).
Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.
Place under a broiler at high heat just until cheese is melted.

Also, I couldn't believe my eyes to see Watermelon on sale today! It was deliciously sweet, and oh-so-good with the pizza... It all tasted just like summer!

Update...
Again, no pictures this time - but here's a rundown of the highlights of our week!
Peter and I enjoyed the long weekend along with the beautiful weather we've been having! We spent Monday in Portland shopping at Washington Square, and I didn't buy a thing! :-P Afterward we enjoyed a lovely lunch and the evening with some friends, Brandon & Nicole Rozema...
Wednesday our workers, Rose and Nola came back from being in Burns - to be on our side of the field for a few weeks... and we're enjoying all of their company that we can get! We had our very first Wednesday night meeting at our home last Wednesday, so it was special to have the girls here for that.
Yesterday Peter had to run in to Gresham, so after finishing up his chores there, we went shopping, this time to Clackamas Town Center! And once again, I came home empty handed! :) (why is it when I'm looking for red shoes, I can't ever find cute ones?!)
Our weather has been SO beautiful this last week. Before long I think we'll be able to start the motorcycles up and take them out for a spin! They've gotten quite dusty sitting in the garage all winter.
Next weekend we're going on the Sternwheeler Cruise - so I should have some pictures to post then.
