Dinner - Again!

Tonight was a new experiment! I made Cauliflower Crusted Pizza... and it was GOOD!

My substitutions/additions:
- I used Alfredo sauce mixed w/Pesto instead of Pizza Sauce
- I added feta cheese & olives
- I didn't use fennel

Again - not the most photogenic meal, but tasty!

Cauliflower Pizza Crust

1 cup cooked, riced cauliflower**
1 egg
1 cup mozzarella cheese
1/2tsp fennel
1 tsp oregano
2 tsp parsley

pizza sauce
toppings
mozzarella cheese

Preheat oven to 450 degrees.

Spray a cookie sheet with non-stick spray.

In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.

Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).

Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.

Place under a broiler at high heat just until cheese is melted.

Also, I couldn't believe my eyes to see Watermelon on sale today! It was deliciously sweet, and oh-so-good with the pizza... It all tasted just like summer!

Update...

Again, no pictures this time - but here's a rundown of the highlights of our week!

Peter and I enjoyed the long weekend along with the beautiful weather we've been having! We spent Monday in Portland shopping at Washington Square, and I didn't buy a thing! :-P Afterward we enjoyed a lovely lunch and the evening with some friends, Brandon & Nicole Rozema...

Wednesday our workers, Rose and Nola came back from being in Burns - to be on our side of the field for a few weeks... and we're enjoying all of their company that we can get! We had our very first Wednesday night meeting at our home last Wednesday, so it was special to have the girls here for that.

Yesterday Peter had to run in to Gresham, so after finishing up his chores there, we went shopping, this time to Clackamas Town Center! And once again, I came home empty handed! :) (why is it when I'm looking for red shoes, I can't ever find cute ones?!)

Our weather has been SO beautiful this last week. Before long I think we'll be able to start the motorcycles up and take them out for a spin! They've gotten quite dusty sitting in the garage all winter.

Next weekend we're going on the Sternwheeler Cruise - so I should have some pictures to post then.

That's all folks - Hope you've had a nice weekend and are enjoying weather like we are! If not, come visit and we'll share!

Dr. Pepper really should pay us...

Come on... does advertising get much cuter than this?!
Tangerines - one of his favorite foods...
The vet informed us tonight that he's getting a little chubby - so looks like he'll be cutting back a bit!

Apparently NOT a bather...

We found out tonight that Dozer vehemently hates being bathed. Peter and I wrapped up the situation with many battle scars, and a VERY unhappy cat.
Why does "wet rat" come to mind?Trying to regain his dignity - in his box of course! (where else?!)
"don't EVER do that to me again"

Sunday Fondue Party!

Today we had a fondue party after meeting with some of our friends here.

On the menu:
Cheddar & Tomato Ranch Fondue
Smoked Cheddar Apple Cider Fondue (recipe available)
Chocolate Bar Fondue

Dippings:
Apples

The Smoked Cheddar Apple Cider Fondue was delicious, as was the Chocolate Bar Fondue... however, I still need to perfect the Cheddar & Tomato Ranch Fondue.
It was good fun, and although I didn't take any photos of the spread, I did get some of the cutest little girl around!
Sweet Lil' Neena - ready for night-night

Stars on Ice

Peter and I had a blast at the Stars on Ice performance featuring Olympic Gold Metalist, Sasha Cohen at the Portland Rose Quarter on Saturday evening...
All the performers:The girls (minus Sasha Cohen):
**Sorry for the poor video quality - I took these on the camera which apparently doesn't do so well at fast paced movements...
Beautiful, graceful Ice Dance:

Cute Tights...

Since living in Oregon, I've learned to appreciate WARM, cute clothes. Not that these tights are so warm, but definitely cute! :-)
